I have an over abundance of cucumbers from my garden this year. The thought of wasting them makes me crazy! As an alternative to cucumber salad I tried this amazing roasted red pepper and green onion filled dip! PERFECT for fresh sliced cucs from the garden!
This is the scene out of our garden about every other day! What to do with them all!
It’s awesome, but how many cucumbers can one eat? With this recipe I have not had to waste a- one! It’s Delicious! The kids even like it!
This is a Kraft Recipe but I use whatever I have in the house – I also only use 1/2 a packet of ranch dressing mix instead. Try it both ways and see what you like better and use up those cucs!
Ingredients
- 1 cup Mayo
- 1 cup Light Sour Cream
- 1/2 cup Grated Parmesan Cheese
- 1 env. Italian Dressing Mix
- 1 jar (7 oz.) roasted red peppers, well drained, chopped
- 3 Tbsp. sliced green onion, divided

Mmmm…this sounds really good! It’s been a while since I’ve had a cucumber, and dip makes them sound even better!
